1.“挑鱼”:一定要鲜活,鱼眼的颜色要明亮清澈,鱼身要滑。
2.为了让鱼肉的营养全部熬制在鱼汤里,处理好的鱼,在鱼身的两面,可以各划几道刀口。
3.开火热锅,要注意锅子要足够热才能倒油、油烧到7成热就可以,不要等油冒烟了再放入鱼,那样鱼皮就会粘在锅子上,做出的鱼汤成色就差很多。
4.煎鱼时,要用中小火。而且边煎鱼,边轻轻晃动锅子,使鱼皮不会紧紧粘在锅上。不要着急翻面,等一面金黄了,再翻一面煎,这样既可以去除鱼的腥味,将来煲出的鱼汤味道也更鲜美。
